Sheraton Saigon hosts Shanghai food fest
The Sheraton Saigon Hotel & Tower in Ho Chi Minh city is hosting a Shanghai Food Festival all day at the Saigon Café until July 2.
It features Shanghai cuisine cooked by two guest chefs from Starwood, Le Royal Meridien Shanghai: Jackie Chen and Allan Li.
Signature dishes like braised pork belly with soya sauce, fried rice with egg Shanghai style and fried noodles Shanghai style as well as many other dishes particular to the city will tickle customers' palates during the festival.
On July 1, the chefs will put in a live performance of their culinary skills.
Allan Li told Vietweek that the unique flavor of Shanghai cuisine is the combination of sweet and sour tastes. Shanghai cuisine typically uses white vinegar, black vinegar, dried chilli and sugar, he said.
"On this occasion we offer both authentic and modern Shanghai dishes," Li said.
He said fish head soup is one of the most popular dishes in Shanghai.

Hong Kong crustaceans in Saigon
New World Saigon’s Dynasty restaurant has launched a Hong Kong Crustacean promotion.
On this occasion, the Chinese kitchen is offering 10 authentic Hong Kong style dishes made of local crustacean products.
Last Friday, Vietweek interviewed Ho Wing Sang, Chinese Executive sous chef, about his recipes for the promotion.
Chef Ho’s two signatures are Hong Kong style roasted crab and River shrimp with asparagus.
This Hong Kong chef has been working at New World hotel in Vietnam for 17 years. He said he cooks authentic Hong Kong food from local ingredients while applying French food presentation art.
According to chef Ho, the first dish, Hong Kong style roasted crab, was created in Hong Kong around 50 years ago. At that time, Hong Kong started developing rapidly so cuisine art also bloomed.
Ingredients for the dish include two live crabs, one spoon of Chinese black beans, 20 grams of dried Japanese scallops, one spoon of garlic, 10 grams of fresh chili and cooking oil, salt and chicken powder.
Firstly, the garlic is fried until it turns yellow and releases a nice fragrance.
Then the dried scallops are steamed for 90 minutes. After that, they are shredded into tiny pieces for pan frying together with garlic.
Chinese black bean are marinated with soy sauce before being sun-dried.
Then comes the crab roasting. Firstly, the crab is separated into four parts, washed and drained before roasting. After, a little frying powder is added to the crab to avoid the oil burning.
A little salt is put with the crabs in a hot pan full of oil for five minutes until it turns a red-yellow color.
Finally the dish is presented with a roasted crab in the middle of a plate dressed with stir-fried shredded scallops with garlic and black soy beans.
Then comes the second dish, roasted shrimp with asparagus.
Ingredients for this dish include two blue river shrimps, green asparagus, one chili, one spoon of garlic, cooking oil, salt, chicken powder and pepper.
Firstly, the chef uses scissors to cut shrimp's head into two pieces.
To avoid oil burning while roasting, the shrimp head is washed and dried before roasting.
After that the shrimp's body is stir-fried with asparagus and spices. Finally the dish will be presented on a dish and served hot.
Chef Ho said that during this Crustacean promotion he will introduce 10 dishes made of crab, lobster, shrimp, and snails cooked with Chinese herbal medicine.
He also plans to cook dishes not on the menu.
During the interview, Chef Ho spoke good Vietnamese. He explained that he has been speaking Vietnamese at home with his children.
And he also said that when he eats out he likes to study the menu at local restaurants and then learn to cook the Vietnamese dishes.
The Hong Kong chef said southern Vietnamese dishes like ca kho to (fish in clay pot) and canh chua ca (sweet and sour fish soup), lau ca keo (fish hot pot) are his favorites and can cook them well. Ladies’ treats at Caravelle in March
Ho Chi Minh City’s Caravelle Hotel will start its March promotions with a fresh buffet for Women’s Day.
On March 8, the Nineteen Restaurant buffet will feature local and international specialties prepared by male chefs at the hotel.
The dishes will be cooked to order, including saffron marinated fish filet with almonds and golden raisins, garlic and herb butter grilled butterfly river prawns, and mustard crusted beef medallion with shallot comfit.

Halloween Night at Can Gio Resort
Can Gio Resort will celebrate Halloween Festival at its Broccoli Restaurant on the night of October 29.
The event, Halloween Night, which lasts from 6:30-9:00 p.m., features 25 dishes for the traditional annual Western festival.
Customers in the Halloween costumes will be given free of charge either a glass of Bloody Mary wine or a glass of soft drink. The two most impressively dressed people—one man and one woman—will be each awarded a prize. To take part in the Halloween Night, customers must buy a ticket of VND190,000.

Customers who book a wedding party with 10-15 tables will be donated decorations such as the flower gate and balloon firecrackers, soft drinks, mineral water and a 50% price cut for a trial table. Photos of the party will be posted on the hotel’s website www. arcencielhotel.com.vn.
To a party with 16-25 tables, the hotel will donate the host extra services such as a band, a dancers’ group, two bottles of champagne and a master of ceremonies. If the host books a party with 26-45 tables, they are offered not only incentives for parties with 10-25 tables but also a wedding cake. The host of a party with 46 tables or more will be offered a room for the wedding night and a breakfast buffet for the couple.
In particular, during the time of promotions, the hotel gives a 10% discount for lunch parties and one free table for every 10 tables at a party.

Shellfish catch at Caravelle Hotel

Buffet highlights include prawns, mussels, flower crabs, scallops, oysters, sea cockles and clams freshly steamed in baskets, fresh, or cooked in your favorite dish by the Caravelle’s expert chefs.

Caravelle Hotel in Ho Chi Minh City will welcome festive October with a number of special cuisine promotions with an emphasis on different world cuisines.
Highlights include the truffles and Taittinger champagne promotion, the Canadian Thanksgiving buffet, the October US beef feast and Halloween.
From October 8-21, Lobby Lounge of the hotel will serve a selection of chocolate truffles paired with a flute of fine Taittinger champagne for VND380,000++. During this promotion, soft-flavored milk chocolate truffles, bittersweet dark chocolate truffles, and white velvet chocolate truffles will be available.
Also from October 8-21, Nineteen Restaurant will have a shellfish promotion, which will offer all kinds of steamed, chilled or cooked shellfish in favorite dishes. Come and enjoy prawns, mussels, flower crabs, scallops, oysters, sea cockles and clams.

Caravelle pioneers events package
Caravelle Hotel is getting down to business with its latest green initiative.
This month the iconic hotel has launched an eco-meeting package that will provide companies with an environmentally-friendly venue to talk shop in HCMC. Green practices highlighted in the package include an electricity-saving scheme that makes use of natural daylight, purified water served in jugs rather than plastic bottles and the absence of paper products typically supplied by the hotel. Additional equipment can be arranged by the hotel as required.
The Caravelle Eco-Meeting Package is priced at US$34 per person for half-day meetings, and US$39 per person for full-day meetings.
For every person booked on an Eco-Meeting Package, a donation of US$2.30 will be given to the HCMC Association for Conservation of Nature and the Environment to fund the printing of comic books on environmental and nature conservation for Vietnamese primary students.
“After all we’ve done to steer the Caravelle toward its environmentally-responsible goals, extending our green efforts to corporate events and meetings was the next logical step,” said John Gardner, the hotel’s general manager. “We want to provide a space where eco-conscious businesses can comfortably hold events.
